Chipotle Ranch Sauce
like the pepper, not the restaurant
You know when you were little and licking the brownie batter spoon was the ultimate treat? Now, for me, it’s licking the chipotle ranch spoon.
This sauce is a little smokey, a little spicy, and very hard to resist. It’s versatile - salads, tacos, pizza, quesadillas, chicken sandwiches, french fries… you get the gist.
This recipe makes about 1.5 cups of dressing.
Ingredients
1/2 cup mayo
1/2 cup sour cream
1/4 cup milk
1 packet of ranch seasoning
2 chipotle peppers
2 tablespoons adobo sauce
4-6 garlic cloves
2 tablespoons lemon juice
2 tablespoons chives, finely diced
Instructions
Add everything except the chives to a blender and blend until fully combined. Use a chip or a piece of lettuce to give it a taste test. If you want it to be runnier, add another tablespoon or two of milk to thin it out. It will thicken a bit while sitting in the fridge.
Once you have the desired consistency - pour into a jar, add the chives and stir. Let it sit in the fridge for at least 30 minutes so the flavors can mix.
Pour it on everything!! Store in the fridge for up to a week but it’ll be best within 5 days.
So far I’ve used it for tacos and a salad - next up is a grilled chicken sandwich.
