Savory (Spicy) Peanut Sauce
You don't have to make it spicy but some like it hot ya know
Before we get to ingredients, here are a few ideas for how to use this sauce
Steak + Scallion Peanut Noodles (pictured below)
Steak + cucumber salad or rice bowl
Chicken + zucchini skewers over rice
Dipping sauce for summer rolls
Protein (chicken, shrimp, etc) w/ peanut sauce + coconut milk over rice
Really wide rice noodles, stir fried w/ chicken + veggies, tossed w/ peanut sauce
Now on to the recipe - this makes about 1 1/2 cups of sauce which means you can use it for 2-3 recipes or one really large serving.
Ingredients
1/2 cup peanut butter
1/4 cup avocado oil
3 tbsp soy sauce
2 tbsp dijon mustard
2 tbsp gochujang
1 tbsp honey
1 tbsp rice vinegar
1 lime, juiced
2 inches ginger, peeled
3 garlic cloves
1/4 cup water
Instructions
Add everything into a blender and blend until smooth. Transfer to a jar and refrigerate. Keeps in the fridge for up to a week.
Notes
I used to add cilantro into the sauce and you CAN but it has a shorter shelf life than other ingredients so now I just add it into the recipe of whatever I’m making rather than the sauce. If you’re using it all at once, go ahead and chop it into the sauce! I would add it after you’ve blended all other ingredients so that the sauce doesn’t turn green, just pulse it a couple of times at the end.
If you’re like me and you love all things spicy, add more gochujang! Or even a spicy pepper or chile flakes.
