This recipe is so easy and so flavorful.
The ingredient list is short but be sure to check out my recipe for salsa verde before making this dish. You can certainly try with your favorite restaurant or store bought salsa verde but I personally have not done so. I think the cumin in my recipe comes out really nicely in this dish!
1.5 cups salsa verde
1 tablespoon oil (olive, safflower, avocado...)
1 teaspoon red pepper flakes
Other: toasted bread, cilantro, cheese (feta or cotija), radish slices, avocado...
Heat the oil + red pepper flakes in a skillet over medium heat. When you see the red pepper flakes start to "bleed" into the oil (transfer of red color) add in the salsa verde.
Stir occasionally to keep it from cooking unevenly. Once it starts to thicken up, create two divots with your spoon. Crack an egg into a small cup or dish and pour into the divot. Repeat with the second egg.
Cover the skillet for 3-5 minutes then remove from heat and serve!
You can eat this straight from the skillet - serve with plenty of toasted bread on the side for dipping! Top it off with fun things like fresh cilantro, feta or cotija cheese, radish slices, avocado, lots of options.
