I've said it before and I'll say it again - homemade dressings are healthier and tastier because they are fresher and you control what goes in them.
1/2 cup avocado or dark olive oil
1 lemon (juice, about 2 tablespoons)
1 tablespoon kalamata olive juice (from the jar they sit in)
1 teaspoon honey
2 tablespoons red wine vinegar
1 teaspoon dijon mustard
1 teaspoon fresh dill (or more!)
1 teaspoon dried basil (fresh works too)
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder (or one clove, minced)
salt and pepper to taste
Combine all ingredients in a jar or container w/ a lid and shake aggressively until mixed! Pour over a big salad and enjoy. Save in the fridge for 3-5 days!
