My Big Fat Greek Pasta Salad

It's mostly salad with some pasta in it - feel free to change up the ratio! Live your best life!



If you want it to be more pasta than salad - use 4 cups pasta and a couple handfuls of chopped up spring mix.


You'll need:

  • Spring mix lettuce (enough for 4-5 people)

  • 1 cup kalamata olives

  • 1/2 cup feta cheese

  • 4 small persian cucumbers (about 1.5 cups chopped)

  • 1/2 red onion, diced and soaked in water for about 5 minutes

  • 3-4 large radishes, cut into slices or chopped

  • 1/2 green bell pepper, diced

  • 24 small shrimps (approximate! I used small/medium shrimps so wanted 6 per person)

  • 2 tablespoons salted butter (or unsalted + salt!)

  • 1/2 teaspoon spicy garlic or 1/2 teaspoon garlic + 1/4 teaspoon cayenne

  • 2 tablespoons chopped cilantro (optional but love it!)

  • 1 tablespoon lemon juice

  • 2 cups cooked pasta - use a small or medium pasta such as fusilli, farfalle, orecchiette

  • Greek salad dressing - I suggest my own recipe of course! homemade is better.


Instructions:

  1. Cook your pasta according to the package instructions (in salted water!!) and keep it covered when its done to keep from drying. You can also drizzle a teaspoon or so of olive oil or dressing to keep it from sticking together. It's best if you let it sit in the fridge for a bit ahead of time to cool down.

  2. Chop all of your veggies and set aside, covered - soak the red onion to take out some of the ~bite~

  3. In a medium or large skillet, melt one tablespoon of butter. Rinse your shrimp and pat them dry then add to the skillet either all at once or in batches depending on the size of your skilled, (I had to cook half at a time). Squeeze in some lemon juice, add the spicy garlic and cilantro then let them cook for two minutes on each side. You can toss the pasta with the extra garlic butter sauce if you're feeling it. You can make this ahead of time and let the shrimp cool down or you can serve it with the shrimp still warm!

  4. Add the spring mix and veggies to a large salad bowl. Add in the kalamata olives and feta cheese. Then add the pasta and garlic butter shrimp. Pour the dressing over top and mix it all together! Serve and enjoy! Crack some fresh pepper and sprinkle some red chili flakes because it'll make me happy.


This would be great for meal prep - just leave the dressing on the side because nobody likes soggy lettuce :X
