Orange Glazed Shrimp Bowl

This salad/bowl got me so excited for summer

I feel like I should be on a beach somewhere

This is a quick recipe- under 30 minutes for sure. Great for a week night or a quick lunch especially if you use frozen or precooked rice!



Serves 2


You'll need:

  • 1 cup brown rice (cooked)

  • 10-12 shrimps

  • 2 handfuls mixed greens

  • 2 Persian cucumbers

  • 2 radishes

  • 6 brussels sprouts

  • salt, pepper, garlic powder

  • 1 tablespoon sesame oil

  • 2 tablespoons fresh squeezed orange juice


Orange Sesame Vinaigrette:

  • 2 tablespoons fresh squeezed orange juice

  • 2 tablespoons rice vinegar

  • 2 tablespoons sesame oil

  • 1 tablespoon honey

  • 1/4 teaspoon salt

  • 1 teaspoon sesame seeds

  • Pinch of red pepper flakes (optional, for heat)


Instructions:

  1. Cook rice and set aside.

  2. Cut up veggies - slice radishes and cucumbers. Thinly slice brussels sprouts and then chop to get a shaved look - you can also just buy shaved brussels sprouts.

  3. Mix together your dressing ingredients in a small bowl - whisk to combine.

  4. Heat sesame oil in a skillet over medium heat. Add shrimp, top with salt, pepper, and garlic powder to taste. Pour / squeeze about two tablespoons of fresh orange juice. Flip after two minutes, cook another two minutes then remove and set aside, preferably covered.

  5. Add brussels sprouts to the same skillet, add a little more sesame oil and orange juice if the skillet looks dry - use your discretion here dudes! Cook over medium heat until starting to brown.

  6. Plate starting with rice, add a handful of mixed greens, top with chopped veggies, brussels, and shrimps. Finish with dressing! I use 2 tablespoons for a salad.
