Spinach + Artichoke Pasta Salad

This recipe is for one person but you can easily multiply it for multiple people. Do 1x per person for a whole meal and 1/2x per person for a side! It’s great for a casual at home dinner or a cook out party with friends.



Servings: 1-2 depending on if it’s a meal or a side dish

Time: 10 minutes


You’ll need:

  • 1 cup spinach + cheese tortellini

  • 1/4 cup mini mozzarella balls

  • 2 cups chopped spinach

  • 1/3 cup chopped artichoke

  • 4-5 basil leaves, sliced

  • salt, pepper, crushed red pepper to taste

  • a drizzle of balsamic glaze


Instructions:

  1. Boil the tortellini according to its package instructions. when it’s done cooking, drain and then rinse with cold water until the pasta is either room temp or cold.

  2. Add the tortellini and everything else to a bowl and toss!

  3. Enjoy as a meal, base, or side
