15 Minute Pulled Pork Tacos

Because i’m getting ready to move which means no I don’t have the patience for cooking right now !!! I got all my ingredients from trader joe’s but literally any grocery store should have these things. if they don’t, they should rethink calling themselves a grocery store.






You will need:

  • 1lb package of already cooked pulled pork (preferably in a sauce - if not just add 1/4 cup bbq sauce when cooking)

  • 1 package of tortillas (this made 12 mini tacos for me)

  • 1 cup shredded cabbage (yep, get the already shredded in a bag kind)

  • 1 tablespoon ranch dressing


Optional to kick it up a notch:

  • 1/2 of a jalapeño, diced

  • 1/4 cup diced white onion

  • 1/2 of a lime, juice

  • 1/3 cup diced cilantro (loosely packed)


Instructions:

  1. Add cabbage + ranch dressing (and salt + pepper to taste) to a bowl and mix. Add jalapeño, onion, lime juice, cilantro to the same bowl (if you’re using them) and toss it all together.

  2. Cook (lol reheat) the pulled pork according to package instructions - I chose stovetop for the most even reheating.

  3. While the pork is heating up, heat your tortillas on a griddle or skillet. Cook on medium high heat until it starts to puff up then flip it and cook for another 15-30 seconds. Keep them covered so they steam and get softer so they’ll taste more like freshly made tortillas.

  4. Assemble your tacos and enjoy!!


Tips:

  • These are only 4 ingredients so go ahead and get the nice tortillas - you know the ones that look like they could be handmade.

  • If the pork you bought is really saucy, just let it cook a little bit longer so the sauce thickens up. Also - I highly recommend reheating on the stove so it gets evenly reheated. microwaves will give you hot and cold spots ugh.
