Another easy weeknight meal for you! These taste like dumplings which makes me love them even more.

Time: 30 minutes ish
You'll need:
Meatballs
1 lb ground turkey (I like the 93/7 blend)
1/2 - 1 cup panko breadcrumbs
2 tablespoons soy sauce
1 tablespoon sriracha
2 green onions, green and white parts thinly sliced
1/2 inch ginger, grated
1-2 cloves garlic, grated
1 small shallot, grated
1/2 teaspoon white pepper
Sauce
2 teaspoons soy sauce
1 teaspoon sriracha
1 teaspoon rice vinegar
1 teaspoon hoisin
For serving:
White rice
Green onions, diced
Cucumber + Carrot - sliced or julienned
Sesame seeds
Instructions:
Start by making rice! Four servings, cook according to package instructions.
Preheat the oven to 400 degrees F and line a baking sheet with aluminum foil
Combine all of the meatball ingredients in a mixing bowl and use either a fork, rubber spatula, or your hands (oh my!) to gently mix. Be careful not to apply too much pressure or the mix may become too dense
Use an ice cream scoop or just your hands to measure and shape the turkey into balls! I made mine about 2 tablespoons each but you could make them smaller for sure. Place them at least an inch apart on the baking sheet.
Bake for 15 minutes (or 10 if they are significantly smaller). While they're baking, mix together the sauce and begin cutting the green onion, cucumber, carrot for topping.
After 15 minutes, remove the baking sheet and then brush the top of each meatball with the sauce. Keep the rest of it off to the side. Bake for another 10 minutes (same for small or large meatballs)
Plate: start with rice then add carrots + cucumber. Top with meatballs, sauce, sesame seeds + diced green onion. Enjoy!
