Fall is my favorite season, easily. This salad is a bite of that crisp fall feeling you get when you wake up and its 65 degrees out and everything feels refreshed.
This salad is packed with apples and pumpkin seeds which give it a nice crisp feel. The contrast between creamy goat cheese and crispy prosciutto is sultry. You've got chicken for protein (can be replaced with chickpeas) and avocado for a healthy fat.
I drizzle this with a nice light honey dijon vinaigrette that complements the other flavors perfectly. Also it is incredibly easy to make. This whole salad is easy to make. And definitely not boring, nobody likes a boring salad.
Mixed greens work really well as a base for this. You don't want to use a lettuce that will distract from the rest of whats going on. Because there's a lot going on.
Make this for lunch or dinner, yourself or a group. It is destined to be a crowd pleaser. If you're in the mood for something a little heavier, small dice and sauté a sweet potato and add it in.
Also, seriously take the extra step to make fresh dressing. It'll pair better than any store bought dressing, it's super easy and you know what's in it - nothing weird, no preservatives, no sneaky added sodium.

Ingredients
Lettuce (enough for two people)
1 chicken breast
2-3 slices of prosciutto
1 honeycrisp apple
1 avocado
⅓ cup roasted pumpkin seeds
⅓ cup goat cheese
Honey Dijon Vinaigrette Dressing:
-2 tablespoons dijon mustard
-1 tablespoon olive oil
-1 tablespoon white wine vinegar
-1 tablespoon honey
-1 teaspoon fresh cracked black pepper
Preparation
1. Cut the chicken into thin strips, cutting at an angle is helpful. Sauté in skillet over medium
heat with 1 tablespoon olive oil, plus salt and pepper to taste. Remove.
2. Add two or three slices of prosciutto to the pan and cook until crispy (it’s basically bacon,
you know the drill)
3. Cut an avocado in half, remove the pit and peel the skin, then cut in slices.
4. Cut the apple into thin slices and chop up the prosciutto.
5. Add dressing ingredients to a bowl and whisk.
6. Add lettuce to a salad bowl, top with chicken, apple slices, avocado, pumpkin seeds, goat
cheese and dressing. Mix and split into bowls or onto plates. Enjoy!
Tip: look for pepitas at the grocery store. They're a type of pumpkin seed that are only found in certain pumpkin varieties and don't require shelling.
