Beach Vacation Island Chicken Tacos w/ Mango Salsa

This recipe comes together in a quick 20-30 minutes and will make you feel like you're at the beach. I recommend pairing with a marg or mojito if you're in that mindset.



The items I use in this recipe are from Trader Joe's BUT if you don't live near one or can't find these at your local store, I provided alternatives in the notes below the recipe <3



Time: 30 minutes, maybe less

Servings: 2 people, can easily double or triple!


You'll need

  • 2 chicken breasts (about 1lb chicken)

  • Tortillas, quantity will depend on size

  • Jicama wraps (same # as tortillas, optional - Trader Joe's item)

  • 1/3 cup Trader Joe's Island Soyaki sauce / marinade (see notes for alternative)

  • Optional: Trader Joe's Citrusy Garlic Seasoning


Mango Salsa:

  • 1 cup diced mango

  • 1 cup diced cilantro

  • 1 persian cucumber, diced

  • 1 jalapeño, diced

  • 1/4 of a large white onion, diced (about 1/2 cup)

  • 1 lime, juiced


Instructions:

  1. Prepare all of the Mango Salsa ingredients, everything should be diced in about 1/2 inch or smaller pieces. Add everything to a small mixing bowl, squeeze in the juice from 1 lime, mix it all up and set aside in the refrigerator.

  2. Thinly slice your two chicken breasts, it helps to cut at an angle (like a wedge shape) to get thinner pieces.

  3. Add a tablespoon of oil (avocado, olive, vegetable) to a sauté pan and set the heat to a smidge above medium. Add in the chicken and cook, stir so both sides of the pieces cook.

  4. Once most of the pink is gone and the outside of the chicken is cooked / white, add in the Island Soyaki sauce and cook until the sauce thickens and gets a little bit sticky - about 10 minutes!

  5. Heat your tortillas either on the stove (pan or burner) or in the microwave. If not using right away, keep them between to plates or covered in some way so they stay soft.

  6. To make tacos: start with a tortilla, add a jicama wrap, then add chicken, top with mango salsa and add a dash of Citrusy Garlic seasoning. Enjoy!!


Notes:

  • Island Soyaki replacement: 1/4 cup teriyaki, 2 tablespoons soy sauce, 2 tablespoons pineapple juice, 2 minced garlic cloves. Mix and use instead of the Island Soyaki sauce.

  • Citrusy Garlic seasoning: again if you don't have access to Trader Joe's or can't find this item at your local store, either 1) feel free to skip! or 2) use something like a chili lime seasoning.

  • You could use just the jicama wraps if you wanted to skip a tortilla, I love tortillas so I used both! The jicama wrap adds a little extra freshness. If you're GF - corn tortillas are you friend and you probably already know this!

  • I make this full recipe for myself. Leftover are great either as tacos again or on a ~tropical~ rice bowl. Just make brown or white rice and add the chicken + mango salsa on top with a handful of lettuce and you're good to go!

  • If you're not in the mood for chicken, feel free to swap out for Shrimp. You could even make some salmon glazed with or marinated in the same sauce. I'm not a huge ~fish~ eater so I'm not sure about how well other types of fish do in tacos but feel free to experiment.
