It's day 2million of quarantine and I'm finally going to get my hair done which inspired me to make blondies!!
These have a hint of cinnamon and espresso powder to really bring it out - I don't think this is "traditional" for blondies but I love them.
makes 12 perfect sized blondies
You'll need:
1.5 cups brown sugar
2 large eggs
1 stick of butter, melted (8 tablespoons, 1/2 cup)
1 teaspoon vanilla
2 tablespoons granulated sugar + more for sprinkling
1 teaspoon ground cinnamon
1 teaspoon instant espresso
1/2 teaspoon kosher salt
1.5 cups all purpose flour
1/2 teaspoon baking powder
1/2 cup dark chocolate chips (optional)
Instructions:
Preheat oven to 350 degrees F and grease or butter a 9x7" bakeware dish
Add brown sugar, eggs, vanilla, butter, and granulated sugar to a stand mixer or medium sized mixing bowl. Beat together until combined. Add in the cinnamon and espresso powder and mix again.
Sift the flour, salt, and baking powder into a bowl and then gradually add it into the wet ingredients half at a time, fully mixing as you go.
If using chocolate, fold it in at this time! Then pour the batter into your baking dish, smooth it out as much as you can for an even bake and then sprinkle the top with granulated sugar - just a light dusting.
Bake for 25-30 minutes - toothpick testing to make sure they're at least mostly done! I like to leave them a little half baked in the center as you can tell in the photos. Because they are gooey and soft, let them sit for 5 minutes at least before cutting into them. I find its best to cut them into 12 pieces - slice them up and enjoy!
