Captain Jack's Campfire Cookies




You'll need

  • 1 stick butter, room temp

  • 1/2 cup brown sugar

  • 1/2 cup granulated sugar

  • 1 egg

  • 1 shot spiced rum

  • 1 teaspoon vanilla

  • 2 cups flour

  • 1/2 teaspoon baking powder

  • 1/2 cup chocolate chunks (dark or semi sweet)

  • 1 cup marshmallows


Instructions

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.

  2. Using a stand mixer or a large mixing bowl, whip together the butter, vanilla, and sugar (both kinds) until fluffy, add in the egg and rum and beat again. Should still be fluffy, if it begins separating, add another tablespoon of granulated sugar and just keep whipping. Scrape down the sides of the bowl.

  3. Sift flour into the wet ingredients 1/2 cup at a time, mixing in between. Add the baking powder as well. Scrape down the sides as necessary.

  4. Add in choco chunks and marshmallows and mix in with a baking spatula or spoon.

  5. Using an icecream scoop or large spoon, scoop dough into round balls. Place on your baking sheet (with parchment paper) 2 inches apart, fit as many as you can, may need to do a 2nd batch.

  6. Bake at 350 for 15 minutes. Turn the baking sheet 180 degrees half way in case there is an uneven hot spot in your oven (ie: some ovens cook hotter in the back).

  7. Remove from the oven and the baking sheet, let them sit for 5 minutes (I know this is hard but they're still cooking inside) and then enjoy! Goes great with a scoop of vanilla bean :)
