Charcuterie Pasta Salad

The perfect dish to bring to a pool party or BBQ. You can make it ahead of time if you need to. It comes together really quickly and I think has the perfect ratio of pasta to other things.



Time: 10-20 minutes

Makes: about 4 cups of pasta salad - a whole meal for two people or a side for about 4 (can easily be doubled or tripled)


You’ll need

  • 5 oz dry pasta (or 1 bag of Barilla 60 second pasta)

  • 1 handful of arugula lettuce (about 2 cups, loosely)

  • 1/2 cup sliced charcuterie meats (prosciutto, salami, sopressata etc)

  • 1/4 cup manzanilla olives, sliced in half

  • 1/4 cup sliced pepperoncini

  • 1/4 cup feta cheese

  • 1/4 - 1/2 cup diced cucumber

  • 1/4 cup diced white onion

  • 1/4 cup sun dried tomatoes (the kind that come in a jar)


Dressing:

  • 1 tablespoon of oil from the sun dried tomato jar

  • 1 tablespoon lemon juice

  • a drizzle of balsamic glaze

  • red pepper flakes, salt, pepper all to taste


Instructions:

  1. cook your pasta until al dente (or just microwave if you buy the Barilla packet). Let the pasta cool!!!! You don’t want it to wilt the arugula

  2. While the pasta is cooking / cooling - prep the rest of your ingredients

  3. Add everything to a bowl. Drizzle with oil, lemon juice, balsamic glaze. Add salt + pepper + red pepper flakes to your preference. Toss everything together and enjoy! You can eat it right away or make it a few hours in advance. If you are making it ahead of time, just store in a Tupperware in the fridge until you are ready to serve.
