how have I not posted this yet?! anyways - as you may know, I am not great at measuring things so this is all approximate!
1 head romaine lettuce
1/4 cup finely grated parmesan cheese (MUST BE FRESH!!!)
1 tablespoon good olive oil
1 teaspoon lemon zest
1 tablespoon lemon juice
2 teaspoons minced garlic or garlic paste
2 teaspoons dijon mustard
1 teaspoon anchovy paste or worcestershire sauce
pinch of salt and freshly cracked black pepper
Add all the dressing ingredients to a mixing bowl and whisk to combine.
Wash and chop the lettuce. Add that and the parm into the mixing bowl and toss until combined!
Serve with some sort of protein or as a side / starter. Whatever you want!
I buy anchovy paste at Whole Foods in the canned fish section. I am super picky about seafood but even I add this !!
I like to serve with either a nice steak or with grilled chicken. Sometimes I add in pasta and other veggies like corn and jalapeños.
Fresh parm is super important - buy a block !!!! And use the smallest size grater you have (I use my zester) to make it extra fluffy
Making the dressing in the bottom of your salad bowl is fun and also means one less dirty dish!
