Easy Bake Crustless Quiche

Weekends are my favorite for a lot of reasons but mainly because I take the time to make a yummy breakfast or brunch like this one!


It's the start of 2020: I'm really working on eating better. This recipe makes that easy for me!

It's dairy free and gluten free/ grain free. I used the veggies I had left in my fridge from other meals this week which was super convenient.



I've mentioned this in other posts but I am not gluten free or dairy free. I occasionally consciously cut both out of recipes where they really aren't needed. Small choices add up apparently.



As I said I just used the veggies I had on hand, didn't feel like going to the store for anything. I almost always have spinach, sweet potato, onion, mushrooms, and jalapeño. Some other yummy veggies that would work really well are green/red peppers, green onion, broccoli, asparagus, and cherry tomatoes.



I cooked my mushrooms and a slice of turkey in my air fryer before adding them to my quiche mix. This is totally not necessary I just wanted them extra cooked. I set my air fryer to 300 degrees and cooked the mushrooms for 8 minutes, and added turkey in the last 4 minutes. Easy! but again, not necessary.



I also had fresh dill in my refrigerator because I've used it in a couple of recipes this week. I like to keep a couple of different fresh herbs on hand at all times because they brighten recipes up quickly. I also have a basil plant that has somehow been alive for 6 months (shout out to my roommate for watering it).



You'll need

4 eggs

1/4 cup unsweetened almond milk

1/3 cup shredded sweet potato

1 handful baby spinach, rough chopped

1 shallot, diced

1/2 jalapeno, diced

1/4 cup diced shitake mushroom

1-2 slices of deli turkey

1/2 teaspoon black pepper

1/2 teaspoon onion salt or garlic salt

1/2 teaspoon red pepper flakes

1 tablespoon fresh dill


Instructions:

Preheat oven to 400 degrees F

Prepare veggies, dice the turkey slice(s)

Crack all four eggs into a mixing bowl. Add in almond milk and whisk. Add in spices and dill, whisk again.

Spray two oven safe personal sized dishes with olive oil or canola oil

Add veggies/ turkey into your mixing bowl and stir to mix it all in

Split the quiche mix between two bowls. Bake in the oven for 30 minutes.

Serve topped with fresh herbs (I used dill and diced radish) and maybe some hot sauce!
