Egg Roll in a Bowl

This is one of those easy lunch / dinner / meal prep recipes that people go nuts for. I hope.



You'll need:

  • 1 cup jasmine rice

  • 1lb ground chicken (other ground meats work just as well!)

  • 1/2 of a yellow onion, chopped

  • 2 garlic cloves, diced or minced

  • 2 cups coleslaw or cabbage mix

  • 2 scallions, diced

  • 1/2 cup cilantro, chopped

  • Salt + pepper to taste (I like using white pepper for this one, if you have it)


Sauce:

  • 2 tablespoons soy sauce

  • 1 tablespoon sriracha

  • 1 tablespoon sesame oil

  • 1 tablespoon rice vinegar


Instructions

  1. Cook rice according to package instructions or personal preference.

  2. Add a glug of olive oil to a pan and heat over medium. Add in the chopped onion and sauté until translucent. Add the garlic and sauté for a couple minutes. Add in the ground chicken and start breaking it up with a spatula.

  3. Mix your sauce ingredients in a small bowl

  4. Once the ground chicken is fully cooked and the liquid has mostly cooked away, add in the sauce and coleslaw mix. Stir to combine.

  5. Sauté until the cabbage is softened and the sauce is cooked in. Add in cilantro and green onion.

  6. Add to a bowl or plate with rice. Top with sesame seeds and a fresh squeeze of lime juice. Enjoy!!!
