Garden Skillet Pizza - oven or grill

It’s summer which means grilling season! I also finally got the enameled cast iron my sister got me for Christmas so I’ve been using it nonstop.


Time: 45 minutes

Serves: 2


Three ways to make pizza:

  1. Oven: Preheat the oven to 425, sit the cast iron in the oven while its heating up. Remove the skillet, add in your dough + toppings and bake for 10-12 minutes then broil for 2.

  2. Grill x skillet: Preheat the grill to 425, sit the cast iron in the grill while its heating up. Remove the skillet, add in your dough + toppings and bake for 10-12 minutes.

  3. Grill x direct: Preheat the grill to 425. Flour and toss your dough onto a cookie sheet (no rims) Roll or spread it to the size and shape you want. Once the grill is hot, use the cookie sheet to transfer the dough directly onto the grill. Close and cook for a few minutes then use a spatula and the cookie sheet to remove the dough, flip it over, add toppings and transfer it back onto the grill until the toppings are done!


Ingredients:

  • pizza dough (homemade or store bought) * see note below

  • 1 tablespoon butter

  • 1 teaspoon fresh minced garlic

  • 1 teaspoon Italian seasoning

  • 1/2 cup freshly shredded mozzarella cheese

  • 1/4- 1/3 cup fresh corn

  • 1/4 cup thinly sliced zucchini

  • 1/4 cup thinly sliced white onion

  • 1/4 cup meat - Italian sausage (cooked) or prosciutto work well

  • 1/4 cup sun dried tomatoes (I like the kind that come in a jar)

  • 1 cup arugula tossed w/ a squeeze of lemon

  • fresh basil

  • Other: balsamic glaze + red pepper flakes or Calabrian chiles for topping


Instructions:

  1. Let your dough sit at room temp for 20 minutes before you try to roll it out. If it’s still chilled it will bounce back into shape and be harder to spread out. Sprinkle a clean surface with flour, place the dough on that surface and then sprinkle the dough with more flour. Use your hands or a rolling pin to spread it out into a circle.

  2. Prepare toppings. Melt butter (30-45 seconds in the microwave) and then mix in garlic + Italian seasoning.

  3. Use one of the methods from up top. It’s easiest to prepare your ingredients ahead of time or while the oven / grill is heating up so they are ready to go.

  4. Add your dough into the heated skillet and mold it to fit the bottom of the skillet. Be careful it’s hot! Use a spoon or brush to spread the butter across the dough. Add cheese then veggies and meat (if using) and then bake for 10-12 minutes. Remove (or just open the grill) and add sun dried tomatoes + a drizzle of the oil (olive oil works too) and toss it back in (or close the grill) and broil for 2-3 minutes.

  5. Remove from the oven or grill, top with lemony arugula and basil. Slice and enjoy!


Notes:

  • You can make dough (I don’t have a recipe) or you can just buy it from the grocery store! I have tried Publix (for my southerners), Whole Foods, and Trader Joe’s and I like Trader Joe’s the best. You can find it in the refrigerated section. You can also call your local pizza place (not a chain like dominoes) and ask if they sell fresh dough! For this recipe I only used 1/2 of a ball of dough from Trader Joe’s and saved the other half for another pizza.

  • Feel free to switch up the veggies! I like using seasonal veggies for this pizza and it comes out really fresh.

  • Leave meat off to make it vegetarian!
