these are crazy simple and crazy good
You'll need:
4-5 boneless, skinless chicken thighs
1/3 cup ginger lime marinade (The Ginger People make my favorite!) *see note
2 tablespoons tomato paste
1/4 of a large yellow onion
1/2 cup cilantro, chopped + 1 tablespoon extra
1 lime (cut in halves) (more for serving)
tortillas (homemade or store bought!)
Instructions:
Add the chicken thighs and marinade to a plastic bag or tupperware and let sit for half an hour up to overnight. Chop your onion into 1cm size pieces. Chop your cilantro, add to a bowl with the onion and 1/2 a lime worth of lime juice.
Add a tablespoon of oil (avocado or olive) to a pan or dutch oven - heat over medium low then add in the chicken + marinade + tomato paste and cover. After 5 minutes flip it and cover again. Squeeze in 1/2 a lime worth of juice and a tablespoon of cilantro then cook another 5 minutes. Remove and let it sit for 5 minutes before cutting into thin strips.
Warm your tortillas either in the microwave (~15 seconds) or in a pan then immediately fill with chicken and stop with the cilantro/ onion mix.
Notes:
These go great with an ice cold margarita!
As an alternative to The Ginger People's premade marinade, you can combine:
1 lime (juice)
1 tablespoon soy sauce
1 tablespoon fresh minced ginger
1 clove garlic (minced) or 1/2 teaspoon garlic powder
1/2 teaspoon brown surgar or honey
1/2 teaspoon chili flake
