you’ll need
1 can of chickpeas
2 large garlic cloves
1/2 teaspoon baking soda
1/2 cup chopped cilantro
1/2 cup chopped parsley
1/2 cup chopped basil
1/4 cup olive oil
1 lemon (juice)
1/4 cup tahini
Instructions
Drain the chickpeas and then place them in a pot and cover with enough water so that there’s an extra inch above the chickpeas. Add in garlic cloves and baking soda and simmer on low for 30-45 minutes until the chickpeas are soft to the touch. Drain the chickpeas and set aside.
In a blender or food processor, add lemon juice and tahini and mix until fluffy. Add in olive oil and blend again. Next add in the cilantro, parsley, and basil and mix until its all combined. Scrape down the sides.
Add in your chickpeas and blend until smooth. If its not blending well, add a tablespoon of cold water and try again.
Serve with fresh + warm pita, veggies, crackers... whatever! Also good on sandwiches
