I know it’s summer and people “don’t want to turn on their ovens but these brownies are WORTH IT. I know y’all are still baking cookies
time: 45 minutes (30 is baking)
makes: 12 big brownies
2 sticks of salted butter
2 bars of dark chocolate
1 pinch of salt
1 cup cane or granulated sugar + 1 tablespoon (separate)
2 teaspoons vanilla
2 tablespoons coffee or cold brew
2 oz of cognac (or whiskey)
1/2 cup all purpose flour
1/2 cup cocoa powder (unsweetened)
1 teaspoon baking powder
1 cup chocolate chips
Preheat oven to 350 degrees. Prep a 9x13 in baking pan with parchment paper (use oil to help it stick to the pan)
Whisk together the 4 eggs in a large mixing bowl. Whisk for about a minute or until there are bubbles on the top.
Cut the butter into cubes + chop the chocolate bars. Add both to a microwaves safe bowl and microwave for 30 seconds. Remove, stir, and microwave again until melted.
Add the melted butter + chocolate, sugar, vanilla, salt, cold brew, and cognac into the eggs and whisk together until mixed.
Sift in the flour, cocoa powder, and baking powder. Whisk until just mix. Add in the chocolate chips and stir.
Pour the brownie mix into the baking pan, use a spoon to level the top. Sprinkle a tablespoon or so of sugar on top. Bake for 30 minutes then let cool and cut into 12 pieces - enjoy!
