Italian Deli Tortellini Pasta Salad

Make it for yourself, make it for a gathering. Up to you! I will say it holds well in the fridge for a day or two since its mostly pasta and not really salad :)





Time: 15 minutes

Serves: 2-4 depending on serving size (meal or side)


You’ll need:

  • 1 package cheese tortellini (the one I buy is 10oz, a little more or less won’t hurt)

  • 1/2 cup diced Persian cucumber

  • 1/2 cup mozzarella balls

  • 1/2 cup sliced salami

  • 1/3 cup pepperoncini

  • 1/3 cup green olives, cut in halves

  • 1 handful arugula

  • 1/4 cup diced red onion, optional

  • 1 tablespoon basil pesto

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon olive or avocado oil

  • fresh cracked pepper, red pepper flakes


Instructions:

  1. Cook the tortellini according to the package instructions. Drain and rinse under cool water until its no longer hot.

  2. While the pasta is cooking, mix the pesto, lemon, and olive oil together in a small bowl. Prep the other ingredients.

  3. Add everything to a mixing bowl and toss together. Add in pepper + red pepper flakes to your taste. Serve and enjoy!
