This is the best pasta I’ve had in a while !!! And its an easy, short ingredient list, one pot recipe. Perfect for summer and lots of flavor. Also its creamy without adding cream, heck ya!
All fresh ingredients are from Trader Joe’s. I like their Chicken Sausage a lot, I think they updated the recipe because that wasn’t always the case. I’ve found equally good chicken sausages at Whole Foods, and Publix from brands like Bilinski’s and Aidells. Pasta is from Jovial Foods because brown rice pasta just sits better for me!
You’ll need:
2 servings pasta (short or long will work)
2 tablespoons olive oil
2 Sweet Italian chicken sausage links
1 head of corn
1/4 of a white onion
1/4 cup crumbled feta
1/4 cup basil
1-2 teaspoons red pepper flakes
Instructions:
Bring a pot of salted water to a boil, add the pasta and cook until al dente (about a minute less than package instructions)
While the pasta is cooking, cut the sausage into 1/4 - 1/2 inch slices. Cut the corn off of the cob and large dice the onion.
Once the pasta is done, save about 1/2 cup of pasta water then drain the pasta and set it aside.
Add olive oil, sausage, corn, and onion to the pot and cook over medium heat. Once you see some browning on the pan, add a splash of water, chicken broth, or white wine (like sauvignon blanc) to the pan to deglaze. This picks up all that yummy flavor! Keep cooking until the sausage is golden brown and the onion has softened - you may need to deglaze a second time.
Add the pasta and 1/2 cup of pasta water back in to the pot. Add in red pepper flakes + feta and stir until the feta melts in.
Roll the basil leaves up and thinly slice into ribbons - add most of it to the pasta and stir.
Split between two plates or bowls, top with extra basil and a few crumbles of feta. Enjoy!!
