A fun and festive spin on the classic!
Time: 15 minutes prep, 1 hr sitting
Makes: 8x8x2 inches
4 tablespoons (1/2 stick) unsalted butter
10oz mini marshmallows (1 bag)
pinch of salt
1 teaspoon vanilla
3 cups Rice Krispies
2 cups Lucky Charms
Other: 8x8 or 9x9 dish, parchment paper
Measure out the cereals and add to a mixing bowl. Add parchment paper to the dish you are using.
Add the butter to a (preferably nonstick) pot and slowly melt over low heat. Add in the marshmallows, salt, and vanilla and stir while the marshmallows melt. Keep it on low heat, once the marshmallows are fully melted and there are no more clumps, remove from heat and add to the mixing bowl.
Quickly use a baking spatula to stir and gently mix everything together. Pour into the dish, cover, and freeze or refrigerate for an hour.
Use the bottom of measuring cup or other flat surface to smooth out the mix so it’s flat rather than clumpy. You can also add extra Lucky Charms charms on top (yes, pick them out!!)
Cut into your desired sizing and enjoy!
