Mexican Caesar Dressing [Chopt Copycat]

I am obsessed with Chopt’s Mexican Caesar salad and I’ve tried many times to recreate what I believe is the best salad dressing on this planet. FINALLY I’ve done it.




You’ll need

  • 1/2 cup plain Greek yogurt (I like 5% milk fat)

  • 2 chipotle peppers (the canned in adobo sauce kind)

  • 2 tablespoons olive oil

  • 2 tablespoons mayo

  • 1 lemon (juiced)

  • 3 garlic cloves, chopped

  • 1 tablespoon Dijon mustard

  • 2 teaspoons honey

  • 1 teaspoon salt

  • 1 teaspoon pepper

Instructions

  1. Combine everything in a food processor or blender and blend until smooth and creamy! Give it a taste test and adjust as needed. Salt will bring out more flavor and honey will counteract an acidic bite.

  2. Pour into a jar and store in the fridge for up to a week (this is an estimate, I usually eat within a few dates)

OMG! I have been spending $15.00 at least once a week for this salad at Chopt because I couldn't find a dressing to match. You absolutely nailed it! Thank you so much for sharing!

I don’t think I’ve ever commented on a blog post before in my life but had to this time. This dressing is so yummy!! I’ve never been to that restaurant or had this type of dressing before so I can’t do a comparison but I’m definitely saving and will be using this dressing regularly!
