Like Starbucks peppermint mocha but in cookie form!
1 stick butter, room temp
1 cup granulated sugar
1 large egg
1 teaspoon vanilla
1/2 teaspoon peppermint extract
1/2 cup hot cocoa mix
1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1 pinch of salt
8 small pieces of chocolate (see pic of uncooked dough)
Preheat oven to 350 degrees and line a baking sheet with parchment paper
Add the butter and sugar to the bowl of a stand mixer or a mixing bowl if using a handheld mixer. Cream the butter and sugar together until fluffy, then add the egg and beat until fluffy.
Next add in the vanilla and peppermint extract, mix until incorporated. Then add in the hot chocolate / cocoa mix and mix until combined.
In a small bowl, sift together the flour and baking powder. Add 1/2 of the flour + a pinch of salt into the wet ingredients, mix then add the other 1/2 of the flour and mix again.
Using an icecream scoop, scoop balls of dough onto the baking sheet, place about 2-3" apart. Press a piece of chocolate into each ball of dough.
Bake cookies for 15 minutes, use the toothpick test to check their cooked through, they should still be soft though. Remove and let them sit on the baking sheet for a couple minutes then move to a cooling rack for a couple minutes before eating (or eat them right out of the oven, just be careful not to burn your mouth)
