Rotisserie Chicken Tacos w/ Hominy

If you need a recipe that doesn't actually require cooking, this is it!


This recipe is too easy to pass up. I literally just bought a rotisserie chicken and then used my microwave to heat frozen corn and white hominy.


Basically if you need an easy no cook dinner that’s still healthy, exciting, and flavorful, this is it!



I’ve been in love with radishes lately. They are a fun way to add color and crunch to many different dishes. I think they add the perfect pop of color here!




You'll need

  • 1 rotisserie chicken

  • 1 can hominy

  • 1 cup frozen yellow corn

  • 2 tablespoons or more of salsa

  • 1 teaspoon chili powder

  • Corn tortillas

  • Arugula

  • Avocado

  • Radish, diced

  • Cotija or shredded cheddar cheese (optional)


Instructions:

  1. Pull chicken meat off of the bones. Shred the meat as you're doing this. You can keep the skin if you'd like or remove if you're not a fan

  2. Open the can of hominy, heat in a microwave safe bowl according to instructions (but probably 60 seconds). Drain and add in frozen yellow corn.

  3. Combine chicken, hominy, yellow corn, salsa, and chili seasoning in a bowl and stir to mix.

  4. Warm tortillas either on a skillet or in the microwave.

  5. Start by adding avocado, then arugula, then chicken/corn mix, then top with radish!

  6. You could also add some cheese, cilantro, and hot sauce if you're feeling it.


Note: use whichever salsa is your favorite. I like spicy habanero homemade salsa but not everyone has my heat tolerance.
