Sausage + Beans over Rice

sausage and beans over rice !! my favorite comfort meal bc it involves chopping veggies and a giant cast iron pot and simmering on the stove and the smell of fresh cooked rice. anyways!





time: 45 minutes?

serves: 4 people


You’ll need:

  • 1 cup uncooked rice

  • 1 yellow or red onion

  • 4 celery stalks

  • 1 green bell pepper

  • olive oil

  • 2 tsp dried oregano

  • 2 tsp smoked paprika

  • 2 tbsp chipotle tabasco

  • 3-4 andouille sausages (I used chicken sausage from whole foods)

  • 1 can of cannelini beans

  • 2-4 cups chicken stock

  • 1/3 cup sour cream

  • optional: 1-2 handfuls diced kale

  • for serving: diced green onion, cilantro


Instructions:

  1. preheat a large soup pot over medium low while you finely dice the onion, celery, and green bell pepper.

  2. cook rice according to package instructions or however you like to cook your rice.

  3. slice the sausages and add into the pot with a drizzle of olive oil. sear until browned and then remove.

  4. add in a glug of olive oil, the veggies, oregano, paprika, salt and pepper. sauté until softened.

  5. add the sausages back in and 2-4 cups of chicken stock depending on how soupy you want it to be. drain and rinse the can of beans and then add the beans into the pot. Add in the hot sauce and sour cream and stir. bring it to a simmer for about 5-10 minutes.

  6. when you’re ready to serve turn the heat down and stir in the kale until it softens.

  7. serve over rice and top with diced green onion, cilantro, sour cream, and honestly whatever else tickles your fancy. enjoy!
