Snickerdoodle Banana Muffins

I fully support all of the stress baking going on right now in the world and can confirm that baking these little guys made me a little more calm!


I made banana muffins a couple of weeks ago but you can never have too many in my opinion.

The best way to eat these (my mom can confirm) is to break them in half and dip the middle in cinnamon sugar.

you don’t have to make them miniature but my mom had the baking pan for it so I went for it and boy are they cute. Also you can eat more of them because that is how science works.

you’ll need:

  • 3 overly ripe medium bananas

  • 1 stick of butter, melted

  • 2 eggs

  • 1 teaspoon vanilla

  • 2 tablespoons brown sugar

  • 1/4 cup honey

  • 1 tablespoon cinnamon

  • 1 pinch of salt

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 1/4 cups all purpose flour

  • cooking oil or spray for coating the pan (I like avocado)

  • mix of 2 tbsp sugar + 1 tbsp cinnamon for topping


instructions

  1. preheat oven to 400 degrees F and grease a muffin tin pan

  2. combine all ingredients other than flour & the cinnamon sugar mix in a blender and blend until there are no lumps (30 seconds)

  3. add your flour to a medium sized mixing bowl then pour in the wet ingredients and mix until just combined

  4. use a tablespoon measure to add about 1.5 tablespoons (for mini) or an ice cream scoop (regular sized) to add batter to your pan. Sprinkle each one with cinnamon sugar

  5. bake at 400 for 5 minutes then reduce to 350 for 12 minutes, toothpick test to ensure the middle is cooked through

  6. remove from the oven and sprinkle with more cinnamon sugar! you can also brush them with melted butter before sprinkling. Enjoy!!
