Steak Salad with Pears and Feta

Pears looked EXTRA fine at the grocery store today and it reminded me of this great little salad. Not complicated but it doesn't need to be!


I used to hate the idea of fruit on a salad - a misapprehension I held on to from when I was younger. Luckily my taste buds have grown up!


I typically like making my own dressing but when I don't have time I like to use Garlic Expressions Classic Vinaigrette dressing which I can always find at my grocery stores (Publix/ Whole Foods). You can also buy it on amazon or use/ make your favorite simple vinaigrette. You don't want a strong dressing on this salad.


This can easily be thrown together in 20 minutes if you've already marinated the flank steak. If not you can get away with letting it sit 15-30 minutes so it'll still take under an hour.


The sweet pears are well matched by a bite from the onions and tangy salty feta. I like the contrast that comes from steak on an otherwise very light salad.


Also this is a pretty salad. Red onions and green pears give it a nice POP!


I get in moods where i CRAVE steak salad. It'll sneak up on me for a few days until nothing else sounds good. Luckily they're easy to make. I like using flank steak because I make it with a simple enough flavor that I can use whatever is leftover for an entirely different meal if I want to.

You’ll need:

  • 1 lb flank steak

  • 1 pkg arugula

  • 1 ripe green pear, cut in slices

  • 1/2 purple onion, sliced

  • ½ cup feta cheese

  • Garlic Expressions salad dressing (available at most grocery stores)

  • 2 tbsp butter

  • salt and pepper to taste

  • sliced almonds (optional)

Instructions:

  1. Add the skirt steak, ½ cup of Garlic Expressions dressing, salt and pepper to a plastic bag or container, let sit for 15-30 minutes (or longer if you have time). This dressing also works really well as a marinade!

  2. Dice the pear and onion and set aside.

  3. Melt butter in a cast iron or nonstick skillet over medium heat. Add steak and turn heat up a little bit to medium high. Cook 5-6 min on each side, longer if it’s a thicker piece.

  4. Remove steak and let sit 10 minutes then cut opposite the grain into strips.

  5. Toss arugula with a little bit of dressing and pepper. Plate and top with steak, onions, pears, almonds and feta.

So easy! Enjoy.
