My new favorite sauce!! So good.
I use Trader Joe's jar of sun dried tomatoes for this recipe, it is 8.5oz so if you find something close to that size it should work just fine! The jar will have sun dried tomato oil in it that helps this turn into a pesto sauce so you'll be adding the whole jar not just the tomatoes.
You'll need
8.5 oz of jarred sun dried tomatoes, including the oil
3/4 cup of canned diced tomatoes
3 tablespoons sunflower seeds (preferably roasted and unsalted)
6-8 basil leaves, torn up
2 garlic cloves (about 1 tablespoon) cut into slices
2 tablespoons fresh parmesan, shredded
Instructions
Add all ingredients to a food processor and mix until its evenly combined and chopped.
Serve with fresh bread or crackers on in pasta or on a sandwich or on top of hummus any way you'd like!
