Equipment:
heavy bottomed soup pot or dutch oven
food chopper or processor (or you can hand dice everything really small)
You'll need:
3/4 of a medium yellow onion
2 medium carrots
2 celery stalks
1 tablespoon butter or oil
1 tablespoon sofrito or herbes de provence seasoning blend
2 tablespoons tomato paste
1 carton low sodium chicken or vegetable broth
1/2 cup orzo or other small pasta
1 parmesan rind (optional)
1/4 - 1/2 cup cream (optional)
1 can cannellini beans (or navy or other white bean)
1-2 cups chopped baby kale
