White Bean & Ricotta Hummus

I looove hummus - this is a fun way to switch it up! Also wildly easy to make.



You'll need:

  • 1 can great northern beans

  • 4 cloves garlic

  • 1/2 cup whole milk ricotta cheese

  • 1 sprig rosemary

  • 1 teaspoon lemon juice

  • 1/2 teaspoon lemon zest

  • 1 teaspoon olive or avocado oil

  • pinch of salt

  • pinch of pepper

  • pinch of paprika


Instructions:

  1. Preheat oven to 400 degrees. Remove peel from garlic. Place in aluminum foil + drizzle with olive oil. Bake for 20 minutes then remove.

  2. Drain and rinse your can of beans, set aside.

  3. Combine everything except the beans and oil in a food processor or blender and mix until smooth and whipped.

  4. Add in the oil + beans and mix for at least 30 seconds until it has a creamy texture. If it is struggling to mix, add another teaspoon of oil.

  5. Serve with veggies (fresh or crudités), olives, crackers - whatever you like with hummus! Also great on a sandwich or wrap or rice bowl.
