Winter Harvest Salad

An easy way to use up some veggies. Great for meatless Monday, a grab and go to work salad, a side for a big dinner.







You'll need:

  • 1 cup arugula

  • 1 cup shredded green cabbage

  • 1/2 sweet potato, cut into small cubes (1cm)

  • 3 brussel sprouts, halved

  • 1/4 apple

  • 1/2 persion cucumber

  • 1 heaping tablespoon light sour cream

  • 1 teaspoon tabasco

  • 1 squeeze fresh lemon juice

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • olive or avocado oil (spray oil works really well here)

  • salt and pepper to taste

  • optional: pickled shallot and radish


Instructions:

  1. Combine sour cream, tabasco, lemon juice, spices in a bowl. Mix half of it with the diced sweet potato and Brussel sprouts. Air fry for 10 minutes at 400 degrees (or oven bake for 20 minutes at 400 degrees). Remove and mix with the other half of the tabasco sauce.

  2. Mix arugula and shredded cabbage with a squeeze of lemon, drizzle of oil, salt and pepper.

  3. Plate starting with lettuce blend, then air fried veggies. Then add apple and cucumber slices.

Top with pickled shallots and radishes if you're feeling it. Feta and pumpkin seeds would also be great!
